For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Drink (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Method
For the Cordial: Put the listed components inside a pot, heat until it reaches a gentle boil, mixing to dissolve. Next, take off the heat and leave to cool entirely. Decant into an sterilised bottle, cap it and store chilled, where it will keep for about four weeks.
Preparing the Premix: Pour every liquid ingredients in a big jug, let it rest for an hour, then pass it through , ideally through a fine cloth, to ensure it's completely strained.
When ready to serve: Add 85ml of your cocktail base into your mixing glass packed with ice, gently stirring gently for a minute until cold. Filter into an cold coupe glass or a similar vessel, decorate with a few cranberries adding the final touch using a quick spritz with the mandarin essence over the drink.
